STEP #1 - GATHERING YOUR INGREDIENTS...
MAIN INGREDIENT:

1 (20 ounce/including
liquid) can
garbanzo beans

4 cloves garlic
(ajo) coarsely
chopped

½ Tsp Crushed Red
Pepper
-
1 Tsp Cumin
-
1 Tsp Ground
Coriander
-
4 tbs lemon juice
-
2 Tbs Tahini
-
Salt (sal) to
taste
-
Black Pepper (pimienta
negra) to taste
-
Extra Virgin Olive
Oil

STEP #2 -
BRINGING IT ALL TOGETHER...

Using a small
sauté pan on medium heat, add 2-4 Tbs of olive oil, garlic, Red
Pepper and slowly sauté
DO NOT BURN GARLIC!

Using a blender or
food processor, add the following ingredients: garbanzo beans, reserving half the liquid
in a separate container),
Lemon juice, Tahini, Coriander, and Cumin

Blend beans and
spices until partially smooth then ADD sautéed garlic and oil
mixture

Continue blending
until smooth. Occasionally add reserved liquid from the
garbanzo beans until you have reached YOUR desired consistancy.

Add salt (to
taste) and continue blending until very smooth
-
To serve... put
hummus into a serving dish, add 1-2 Tbs of olive oil and a
little black pepper. Serve with warm pita bread.
