Margarita Salsa...


I love a good salsa accompanied by some good corn chips.  Here is an easy to make salsa (pico de gallo) that really kicks butt!

  • 8 - large, ripe tomatoes, peeled, and coarsely chopped

  • 1 - chopped sweet pepper (green, red, or yellow)

  • 1 - chopped large red onion

  • 1 - chopped small yellow onion

  • 6 - finely chopped cloves of garlic

  • 1 - finely chopped hot pepper (seeds removed) or 1 tbs ground red pepper

  • Juice from 1/2 lime

  • 1 cup coarsely chopped cilantro or culantro

  • 1 oz. Tequila

  • 1 oz. Triple Sec (Gran Marnier if you can afford it)

  • 1 tbs ground Cumin

  • 1 tsp salt

  • 1 tsp black pepper

  • OPTIONAL: 3/4 cup of chopped fresh pineapple or fresh mango

  • Place all ingredients into a large bowl and mix well

  • Chill for several hours and serve with the corn chip of your choice.

Awesome Variation #1

Create a completely NEW salsa by simply substituting fresh PINEAPPLE (Piņa) for the tomato. 

Awesome Concept #1 - Instant guacamole

  • Turn your salsa into incredible guacamole by taking 1 peeled avocado and blending it with about 1 cup (mas o menos) of salsa.

  • To keep your avocado from turning brown in color, place the large seed (pit) of the Avocado into the salsa.
